Tacosanga

I’ve admitted several times that I am not the worlds greatest cook, sure I can whip up something yummy if I need to I just prefer to keep it nice and simple.  As I’ve also mentioned before I’m a huge fan of Rachel Ray and when I do get the urge to cook she is usually my inspiration! 

When I first found the recipe for Tacosagna I wasn’t really sure if my family would like it or not so I help off on fixing it.  One night a few weeks ago  I was scouring the pantry for something yummy  to make for dinner when the ingredients for this recipe seemed to call me to so I gave in and decided to cook Rachel’s version of Mexican Lasagna!  I do have to say  though that I didn’t follow her recipe as much as I followed her technique!  So this is my version of Rachel Ray’s Tacosanga!  Enjoy!

All of the ingredients  needed for Tacosagna!

Brown ground beef, onions, and garlic.

Layer 2 large tortilla shells in bottom of greased 9x13 baking dish.

Cover tortilla’s with a layer of refried beans and ground beef mixture.

Next cover bean and beef mixture with salsa and green chilies.

Layer with Mexican Cheese.

Repeat layers and place in preheated 350 oven for 25 minutes.

Tacosagna hot out of the oven…yummo!

I served my Tacosagna with Mexican Rice and Pico de Gallo!  All of my kids loved this dish and so did my fiancé (and he’s hard to please) so I will definitely be making this again soon! 

Tacosagna

1.5 pounds ground chuck

1 medium onion

1 medium jar of salsa

1 small can of diced green chilies

2 cloves of fresh garlic

1 packet of Taco Seasoning

1 Package large soft tortilla shells

1 packaged of finely shredded Mexican cheese

1 large can refried beans

Preheat oven to 350.  Cook ground beef, onion, and garlic over medium heat until brown.  When ground beef mixture in cooked through add half of the taco seasoning.  In separate pan heat refried beans and remaining half of the taco seasoning until warmed through.  Lightly grease 9x13 inch baking dish.  Place 2 soft tortilla shells in bottom of baking dish, spoon 1/3 of the bean mixture over tortillas and spread to cover.  Spread 1/3 of the ground beef mixture over bean mixture.  Next spread 1/3 of the salsa and green chilies over beef mixture.  Cover with 1/3 cup of Mexican cheese.  Repeat all steps twice more.  Cover with remaining cheese and bake uncovered for 25-30 minutes or until the cheese becomes brown and bubbly!

Lou Lou’s Corner

Every once in a while I come across a website that I get so excited about that I just have to share it with all of my readers, and Lou Lou’s Corner is no exception!

While surfing the web a few days ago for school clothes for my oldest daughters I came across a website that I will no doubt frequent whenever I need something fabulous! From the cutest plush toys ever to the absolute most adorable designer baby clothes Lou Lou’s Corner has it all! Of course I found several cute Appaman clothes that my daughter Savanna would go ape (no fun intended) for as well. I even managed to find the perfect gift for my best friends impending baby shower with their elegant and simple Barefoot Dreams line of baby clothing and gifts.

I would of course be a liar if I told you that I didn’t fall in love with the Jellycat line of plush toys as well, I think my youngest daughter may just be getting the Bunglie Penguin for her birthday it is super adorable!

Life…by the books!

Lately I’ve been putting a lot of thought into where my life is headed…not that I’m on the wrong path or even that I’m not sure what I want to do.  The thing is this…I’ve been in school for too long working on my AA and I’m just burnt out.  What started out as taking two years has slowly lead to three and I am just over it.  Add to that the fact that I am less than enthused about the degree I am working towards (AA in Office System Technology with a dual degree in Medical Billing and Coding)…I would prefer to do Website Design or Graphic Design but I feel stuck in what I’m doing (and hating) now.  I’ve went through a divorce, had two children, moved three times, and had to drop a ridiculous number of classes because of all of the stress I had going on.  Now I’m usually the one who handles stress with flying colors, I rarely ask for help from anyone, and I would honestly just prefer to do it by myself, but with yet another semester getting closer I have no clue how or what to do about it. 

Last semester my usually almost perfect GPA dropped significantly and I just lost the passion that I used to have for my classes.  I know that I have to finish school (dropping out is not even an option) I am just so tired of doing it ALL with little or no support (not to be mistaken with help…as I’ve gotten used to doing it ALL by MYSELF).  I wonder all the time how working moms do it.  I’ve been a SAHM for almost 10 years and a college student for almost three and it takes all of me to get everything done in a day…how on earth do working moms take care of their kids and go to school?  I will be the first to admit that I don’t think I could work, go to school, and be there for my kids like I am now…not that I’m knocking the ones that can…it’s just not for me!  And that brings me to another question…will I be ready to head back into the work force?  Will I be able to get a job…having absolutely NO work history can’t be a good thing!?!  How will I cope with sending my two youngest children to daycare? 

There are millions questions swirling around in my head, a million different reasons for and against going back to work, and more doubt than I care to admit…but I guess in time the answers I need will make themselves know…until then I can only continue working and striving towards my future…one step at a time!

Cooking with my Misadventurous Kids...Strawberrry Yogurt Pie

On this weeks webisode of Cooking with my Misadventurous Kids I have my daughter Taylor helping me make a yummy pie that's perfect for summer!





Strawberry Yogurt Pie

12 oz. strawberry yogurt (and flavor will work)
2 cups whipped topping
1 cup sliced fresh strawberries
1 Graham cracker crust

Add yogurt and whipped topping in a mixing bowl, fold until the mixture is combined. Add sliced strawberries to the yogurt and whipped topping mixture. Pour the mixture into a pre-made (or make your own) graham cracker crust. Place the pie into the freezer for at least 3 hours. Before serving remove from the freezer and allow to thaw slightly. Store any remaining pie in the refrigerator.

I have been complaining for MONTHS about how badly I've needed to get my hair cut...it was seriously LONG and starting to give me horrible headaches. Today I finally said enough is enough and got it all cut off...let me know what you think.


BEFORE...this was actually from about a month ago so my hair was actually a little longer than that today!

I didn't take the time to style it so you'll just have to use your imagination but I LOVE it!

First let me tell you a little bit about In an Instant. The skin care system includes a gentle foaming cleanser, intensive firming serum, instant wrinkle smoother, and a tinted daily moisturizer that are designed to use every day.

When I first started using In an Instant I was a little disappointed that I did not see instant results, there were still lines though fine they were still visible. I've been using In an Instant for several weeks now and the fine lines around my eyes are so much less visible. My absolute favorite product in the In an Instant line is the Tinted Daily Moisture, I love the way it goes on easily with a hint of color and makes wearing make-up completely unnecessary! The products have made my skin look and feel so much better and though I do still have some fine lines they are barely visible and the best part is that I haven't noticed any new lines.


Though I will never be alright with having wrinkles at least I know now that there are products out there that can help reverse the aging process and make your skin look and feel fabulous!

No More Ba Ba

I never thought that I’d say this with a straight face BUT …wait for it…Gaige is officially a big boy!  Now what exactly does that mean?  NO MORE BOTTLE!  Several months ago Bub willingly gave up his bottle for a few days but my fiancé in a less than admirable attempt to get more sleep gave it back to him.  I have never been so angry at him.  Needless to say I was too weak, yes I freely admit that the lack of sleep from months of nightly screaming fits from my colicky Ki Ki mixed with the mere idea of being up with two screaming babies clouded my judgment in a major way, so I gave in and did not try to take the bottle away again.  Let the virtual stoning begin!

Fast forward to two weeks ago.  My usually good, even tempered little boy had been screaming all day for his ba ba.  Now when Jamie gave Bub his bottle back I decided two things

  1. That he was only going to have 1 bottle.  So as hard as it was for him (and for me) I threw all of his bottles away except 1.
  2. That under no circumstance would I give Gaige a bottle during the day.  100_3053_au

That day seemed to drag on forever…when ever Gaige wasn’t distracted by something else he was screaming for his BA BA.  When it was time to wash Kinley’s bottles I went to look for Bub’s (it’s usually in our room don’t ask me why) and it was no where to be found…hmm strange!  Not giving it another thought I went on with the rest of the day as usual until bedtime…dun dun dun..  At exactly 9:30 every night Gaige goes and stands in the doorway to our bedroom (yes he sleeps in our room…that’s another post) and says…”Da Da Night Night!”  Not missing a beat I head to the kitchen to make him a bottle, except I remember before I get there that his bottle is missing.  This is when I officially start freaking out!  So I tell Jamie that the bottle is gone and we put out an APB to find the bottle ASAP!  An hour later the bottle is no where to be found…seriously?  Alright so maybe I shouldn’t have been freaking out like I was but you have to understand that for 6 and a half months I dealt with a colicky baby on top of everything else I did in a day and Kinley has just recently started to get better…I did not want to have 2 babies up crying all night.  That night was one of the longest of my life…not only did Gaige keep me up crying until 3 am but he also kept Kinley up crying until 3 am which left me totally stressed out!  Needless to say I dealt with it all by myself while Jamie slept peacefully in the next room…grrr! 

That was 2 weeks ago and I can not tell you how glad I am that the damn bottle is gone!  Gaige goes to sleep now every night without incident and sleeps ALL NIGHT LONG something he hasn’t done in months!  My lil man truly is a big boy now…yea Gaige!

Happy Anniversary to Us!

Monday is mine and my fiance's 3 year anniversary (do most people even celebrate or acknowledge anniversaries if they are not married)! The past three years have been a mixture of ups and downs...tremendous highs and horrible lows...but as I look back on our journey I realize that I wouldn't trade any of it for all the money in the world. Since I'm doing a little reminiscing I thought that I would share with you the story of how we came to be!

In high school (Freshman year to be exact) I met my future husband Jamie. We dated, if you wanna call talking on the phone for hours, holding hands during a movie, and meeting up at the Skating rink dating, for a couple of months in 9th grade. I'm not sure how or why but I always knew that he would be "the one".

High school came and went and we lost touch. Jamie ended up married to a former friend of mine and I ended up married to a Bible thumping, Christian 10 years my senior. Our paths occasionally crossed and I would be a liar if I said that I didn't wonder "what if?" in those moments. Three years ago I was on Classmates.com and noticed that he had an account as well so I sent him a message asking how he was...that was the beginning of the end of my marriage and the start of something completely unexpected and wonderful! I left my husband soon after that and Jamie and I started dating, he eventually moved in with me and my two girls and a little over a year later we welcomed our first child into our home.

3 years and 2 babies later we're still going strong. I would be a liar if I said we didn't have our moments or that their weren't times when I want to strangle him but he means the world to me! I know every morning when I wake up that he is "the one" and that even though the way we came to be was a little controversial and maybe not the best way to go about it was right!

I love you baby for now until forever, more than the sky, and with every ounce of my heart! Happy Anniversary!

YogaBuddies Bedtime Stories DVD review and GIVEAWAY! *CLOSED*

Being a mom of four comes with many challenges take bedtime for instance, it's always chaotic and never calm and peaceful...a mom can wish can't she!?! My kids have been on a very strict schedule ever since they were babies; dinner, bath, bed and even though the older kids have had the same schedule since they were small getting them to go to bed without an argument is still one of the hardest parts of my day!

Recently I was introduced to YogaBuddies Bedtime stories DVD. The mission of YogaBuddies is to inspire students physically, mentally, emotionally, and socially through the practice of yoga.

Now I will be the first to admit that I have always been intrigued by yoga, the people I know who do yoga swear by it and though I have always wanted to try it I've yet to commit myself to it. Add to that the fact that I'm always a little skeptical about things that I've never tried and you get one very iffy mommy praying to the yoga gods to please calm my children down before bed. I popped in the DVD not at all expecting a miracle but hoping for a little more calm before bed. My 10 and 7 year olds sat in front of the television listening intently and watching the yoga poses before they attempted to do the poses themselves but they quickly overcame their reservations and were up and posing away, even my 2 year old got into the act trying to emulate his sisters! Once the DVD was over my usually rambunctious 7 year old (who never wants to hear it's bedtime) came up to me, gave me a kiss and a hug, and said.."I'm ready for bed!" HALLELUJAH! Let's get personal!

I decided to spend a little while writing a personal post because well let's face it my misadventures are turning into "you gotta try this" and "click here to check this out". Don't get me wrong I adore doing product reviews and giveaways it is just so much work and a lot of stress! So I decided to take today to write about the thing I adore writing about most...my family!

Wow so much has been going on at my house and it feels like it has been forever since I've shared that part of my life with y'all!

So my son will be turning 2 next month and as I sit here typing this I'm wondering where the time went. I swear with each passing day he gains more independence (mommy really dislikes this one), he learns so much that I can barely believe it, and he gets more and more handsome (alright this may be a bit bias but come on he's a cutie pie!) Did I mention before that he's going to be a rock star when he grows up because he so is! Don't believe me? Check this out!

Alright so maybe "Poker Face" isn't a rock song but my lil man is definitely going to rock it out when he gets older!

Kinley my baby is already 8 months and I still can't believe that she will be 1 in just a few short months. Ki Ki is an amazing baby and I'm very happy to report that the colic that plagued her hapiness for the first 6 months of her life is a distant (alright maybe distant isn't the right word since I'm still suffering from sleep deprivation) memory. At just 8 months she can already say close to 10 words...ma ma, da da, bub bub, mar mar, ba ba, bye bye, and a few choice curse words thanks to her Auntie...mommy is not too happy about the "oh shit" she repeats every time someone says it. Kinley is already cruising around the house and trying so desperately to walk and I am so not ready for that one! Here are some new pictures of my lil Baby Beans (remember those dolls? I still have muine that my mom bought me when I was like 5 and Kinley looks just like that doll...it's crazy)!

So as I may have mentioned before I have 6 kids here this summer; my four and my fiance's oldest two so we have a FULL house FULL of chaos! I thought I'd share some pictures of all of the big kids with y'all too...enjoy!

JumpStart.com review and giveaway!

I have been majorly slacking the past few days so I decided to take today and play catch up! And remember there are still a ton of great Fun in the Sun giveaways to enter so make sure you check them out!

If you have kids you know how hard it can be to get them to do anything education related in the summertime. I am always looking for ways to incorporate fun and learning and it's not an easy task! My children are always playing games on the computer the problem is that the games that they choose to play are not at all educational and at their own admission are not always so much fun! My oldest daughter Taylor (10) and my middle daughter Savanna (7) were my guinea pigs for this review and they were absolutely ready and willing to help me out! The first thing I noticed about JumpStart was how interactive the game is! One of the very first activities is creating your own Jumpeez character which both of my girls absolutely loved doing! Once the girls got started playing they loved all of the different lands they could visit and mini-games they could play. I liked the fact that they were playing a game that they enjoyed and learning at the same time...what mom doesn't love that!
