When I was in high school I wanted to be a pastry chef. I would go into the kitchen when everyone was gone, take out my moms cookbooks, and start whipping up what can only be described as “experiments”. Some were inedible and some were delicious. One of my proudest creations in the kitchen came when I was 14 and found a recipe for my grandma’s Red Velvet Cake. I remember standing in that kitchen mixing and measuring and then waiting with baited breath as I watched my cake rise. I can not describe with words how amazing that experience was, but I can say that it was one that I will never forget.

A couple of weeks ago I had the opportunity to do a review for Duncan Hines, was I interested? Come on you know I was …after all what is better than cup cakes and brownies? Um nothing? And when I seen what I would be making I knew that I could not resist. Creamy Red Velvet cupcakes, it had to be fate.

I don’t know about you but trying to entertain on a budget is not always easy for me; it seems like I always have to sacrifice either quality or quantity and no one should have to do that during the holidays. This holiday season Duncan Hines is helping make entertaining easy and enjoyable with amazingly decadent recipes that won’t have your bank account seeing red like my little mans hands in the picture below! gaige3

I adore cupcakes, they never last long in our house, but I love them nonetheless. I have to admit making red velvet cupcakes with the Duncan Hines cake mix was a breeze compared to my previous experience with red velvet cake and they were equally yummy as well…even my son got in on the act! I do have one complaint about the Duncan Hines Red Velvet cake mix; as you can see by the pictures my son was having a good time licking the spoon but he remained red for a good bit after I cleaned him off. Let me just tell you that these cupcakes were absolute heaven! I have been an avid Duncan Hines cake mix user for years because in my opinion they have the most moist mixes, but the addition of the cream cheese mixture just before baking put these cupcakes over the top! I also loved the coconut and mini chocolate chips, they made for an unexpected yet welcome surprise!

1 Package Duncan Hines Moist Deluxe Red Velvet Cake Mix (follow package directions to prepare cupcake batter)

1 8 oz. package cream cheese, softened

2/3 cup granulated sugar

1 large egg

1/2 cup mini chocolate chips

1/2 cup flaked coconut

1 tub Duncan Hines Creamy Home-style Cream Cheese Icing

Baking Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Grease cupcake pans or line with paper or foil baking cups.
  2. Prepare batter according to package directions.
  3. Spoon batter into lined/greased cupcakes pans. In a small bowl, combine cream cheese, sugar, and egg; mix well. Stir in chocolate chips and coconut.
  4. Spoon about 1 Tablespoon of the cream cheese mixture onto the batter of each cupcake.
  5. Bake 25 minutes or until toothpick inserted into center comes out clean. Let cupcakes cool completely. Spread cupcakes with frosting.

Makes about 24 cupcakes.

  81. Honestly, it was hard to get past their Red Velvet cake with the White Chocolate grating on top, but I finally rested on Cherries in the Snow. I would put the cherries in last in the sauce so they could be raw though.....
