My mother is the BEST cook, some of my most fond memories from when I was a kid were of dishes that she made and the conversations and laughs we shared while enjoying them. One of my favorite meals from back in the day would have to be my moms meatloaf, yes I like meatloaf, my mom had a way of taking the ordinary and making it extraordinary! When I became a mother I realized (quickly) that I would have to adopt that same way of thinking if I was ever going to prepare meals as delicious and original as hers!

The first time I ever made meatloaf I knew that I needed to make it special if I was going to convince my children that it was more than mystery meat and so MY recipe for Meatloaf was born…enjoy!

Misadventurous Mommy’s Meatloaf

2 lbs. ground beef

1 medium onion (diced)

1 Large green paper (1/2 diced, 1/2 cut in thin strips

1 cup Italian bread crumbs

1 egg

1 tsp. Italian seasoning

1 Can of Manwhich

Salt and Pepper

Preheat oven to 375 degrees. In a large mixing bowl combine ground beef, onion, diced green pepper, bread crumbs, egg, 1/3 of the can of Manwhich, Italian seasoning, and salt and pepper until well combined; be careful not to over mix ingredients. Place meat mixture into a loaf pan or shape into a loaf on a baking sheet. Cover the top of the meatloaf with remaining Manwhich, being sure to cover the sides as well. Place the strips of green peppers on the top of the meatloaf in any pattern you wish. Bake in a 375 degree oven for an hour or until cooked through and internal temperature reaches 160-165 degrees.

  1. I'm a late bloomer when it comes to appreciating meatloaf--I didn't like it as a kid but for some reason, I love it as an adult!

  4. Would you believe that I have never made a meatloaf? LOL My husband loves meatloaf and always asks me to make it. I should try this one out!
