First I just want to say that I am having huge issues with Blogger (and have been for a few weeks) for some reason when I go to leave a comment on someones post it takes forever and usually times out...so if I usually frequent your blog and you've noticed I haven't been around lately I actually have I just can not seem to leave comments...hopefully it will get better soon!
Alright so a few weeks ago I was over at my girl Alexis' blog looking around (as I always do) and I came across a recipe that I just had to try, which is rare because I do not use recipes...ever! The recipe is for Taco Quiche and since I am a huge fan of Mexican food (I eat tacos at least once a week much to the chagrin of everyone in my family) I just had to try it.
Since this recipe calls for salsa I knew this was the perfect chance for me to try out some of the new Pace Picante Speciality Salsas that I had the pleasure of reviewing. The salsas come in some amazing combinations like Black Bean and Roasted Corn, Pineapple Mango Chipotle and Tequila Lime Salsa...yummo! I was able to try the Salsa Verde which combines tomatillos and jalapenos for a wonderfully spicy kick! Now on to the Taco Quiche Recipe!

Taco Quiche
1 pie shell (I used the Deep Dish)
1 Pound Ground Beef
1 Cup Mexican Cheese
1 medium onion chopped
3 eggs
1/4 cup salsa (I used a combination of the Salsa Verde and Mild Salsa)
1/2 teaspoon salt
1/4 teaspoon pepper
1 envelope taco seasoning
Preheat oven to 400 degrees. Line pie shell with aluminum foil and bake for 5 minutes, remove foil and bake for an additional 5 minutes. In a medium skillet brown ground beef and onion. Place taco meat, cheese, and additional onion (if desired) in the bottom of the pie shell. In a separate bowl whisk 3 eggs, salsa, milk, salt, and pepper (I also added extra cheese into the egg mix). Pour egg mixture over the taco meat in the pie shell. (I recommend placing the pie tin on a baking sheet to avoid spill over into the oven). Cover edges with foil and bake at 400 degrees for 35-40 minutes or until knife inserted into the middle comes out clean. Let stand 5-10 minutes before serving. Yield 6 servings.

This recipe is quickly becoming one of our favorites, even Gaige who refuses to eat anything but green beans and bread loves it! I usually serve this with Mexican Rice and extra salsa for dipping!

Looks great. I was having a hard time with blogger also. Moving things around on my page it went wild and I lost stuff and I am sad. But I do have what I lost saved.
